Welcome, Summer!

The CSA is in its third week, and we are really heatin' up! With summer squash, cucumbers, chard, beets, peas, radishes, onions, cabbage, broccoli, and herbs, there is plenty on the menu! Let's talk about what we can create with these delectable selections!


Summer squash

Grilled and tossed into pastas or rice with other grilled veggies, topped with pesto or marinara, or just salt and pepper, you can't go wrong! You can slice them thin and make zuchinni rollantini! Or spiralize them and use in place of noodles! "Zoodles" are so popular these days. And of course they're great tossed into soups, and salads!

If you're feeling like switching it up a little, try this zuchinni and summer squash gratin!

It's a crowd pleaser at my house!


Cucumber

I don't think most people have any problem using cucumbers, but new ideas are always nice! When I'm not eating cucumber and tomato salad, or tossing cucumbers into a veggie salad, I'm looking for new ways to use them.

Well, the ship has docked with new ideas. Cucumber Boats! I will add 2 recipes here - 1 plant based, and 1 with shrimp!

Beets

Personally, beets are in my top list of favorites. I pickle them and keep them on hand to throw into wraps or sandwhiches and salads. I roast them and toss with chickpeas or lentils. If you have a juicer you can juice them with apple and carrot. YUM!


How about a beet salad?


Lettuce

Lettuce gets used up quickly in my house. I will grill chicken breasts and make a quick ceasar dressing and serve grilled chicken ceasar salads. But if you happen to find yourself with extra lettuce, this salad looks like an easy and delicious way to get it in your bellies!

Swiss Chard

For those of us not used to it, Chard looks intimidating. But do not fear! It's an easy side dish that comes together quickly!


Broccoli

Broccoli is one of America's favorite veggies, so you probably have some favorite ways to prepare it already! But if you're looking to switch things up a bit, here's some more ideas!


Ground Beef and Broccoli stir fry is a favorite in my house, and if a week goes by without it, I get requests for it. It's sure to be on your family's rotation as well!


This Veggie Lover's Pasta salad  is a great way to use a myriad of veggies in one shot!


Cabbage

I LOVE CABBAGE!!!

If you don't know what to do with your cabbage, first of all, relax, you don't have to do anything fancy. you can literally saute it down with some garlic and spices and call it a day. You can add as a final touch to soups as well! Or make coleslaw for a BBQ dinner al fresco this week!


But how about grilled cabbage steaks? You just may become addicted!
