Welcome back to our CSA blog! We are excited to share delicious recipes that feature the fresh produce from Farmer John. This week, we have an amazing variety of ingredients including vibrant Swiss chard, sweet corn, unique goldenberries, and more. Whether you're looking to make a quick meal or a standout dish for family gatherings, these recipes will help you make the most of your CSA share!


Swiss Chard and Garlic Sauté


Swiss chard is not only tasty but also rich in vitamins A and K. This simple sauté is a healthy side that complements almost any dish, perfect for a weeknight dinner.

Ingredients:

  • 1 bunch of Swiss chard, chopped (approximately 2-3 cups)

  • 3 cloves of garlic, minced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • A squeeze of lemon juice (optional)


Instructions:

  1. Heat olive oil in a large skillet over medium heat.

  2. Add minced garlic and sauté for about 1 minute, until fragrant.

  3. Add chopped Swiss chard and cook until wilted, about 3-5 minutes.

  4. Season with salt, pepper, and a squeeze of lemon juice if desired.


Serve this vibrant dish with grilled chicken or fish for a nutritious meal that balances flavors and textures.


Roasted Beets and Red Skin Potatoes

  • 2 medium beets, peeled and cubed (about 1 cup)

  • 4 red skin potatoes, quartered (about 2 cups)

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

  • Salt and pepper to taste


Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, toss the beets and potatoes with olive oil, thyme, salt, and pepper.

  3. Spread the mixture on a baking sheet in a single layer.

  4. Roast for 30-35 minutes, or until tender and slightly caramelized.

Colorful Pepper and Bean Stir-Fry


This quick stir-fry takes advantage of the fresh, colorful peppers and beans from your CSA share. It's a flavorful and healthy dish ready in under 15 minutes.

  • 1 cup of mixed colored peppers, sliced

  • 1 cup of green beans, trimmed (about 100-150 grams)

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon ginger, grated

  • Cooked rice or quinoa for serving


Instructions:

  1. Heat sesame oil in a large skillet or wok over medium-high heat.

  2. Add ginger and sauté for 30 seconds.

  3. Toss in sliced peppers and green beans, cooking for about 5-7 minutes until tender-crisp.

  4. Drizzle with soy sauce and stir to combine.


Serve this beautiful stir-fry over rice or quinoa for a complete meal that packs a flavorful punch!


Sweet Corn and Tomato Salad


When corn and tomatoes are in season, this salad is a must-try. It’s a refreshing dish that highlights summer's best flavors.


Ingredients:

  • 2 ears of sweet corn, kernels removed (approximately 2 cups)

  • 2 cups cherry tomatoes, halved

  • 1/4 cup fresh basil, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste


Instructions:

  1. In a large bowl, combine corn, cherry tomatoes, and basil.

  2. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.

  3. Toss gently to combine.


This salad is not only refreshing but can be made ahead of time. Serve it chilled for the best experience!


Goldenberry Jam


Goldenberries are a unique ingredient that can easily be converted into a delicious jam. This simple recipe yields a spread that's perfect for toast or desserts.


Ingredients:

  • 2 cups goldenberries, husked and rinsed

  • 1 cup sugar

  • 1 tablespoon lemon juice

  • 1/2 cup water


Instructions:

  1. In a saucepan, combine goldenberries, sugar, lemon juice, and water.

  2. Bring to a boil over medium heat, then reduce to a simmer.

  3. Cook for about 20-25 minutes, stirring occasionally, until the mixture thickens.

  4. Pour into sterilized jars and let cool before sealing.


This sweet and tangy jam makes for a delightful addition to your breakfast routine!


Shishito Peppers with Sea Salt


If you receive shishito peppers in your share, try this straightforward method that enhances their natural flavor.


Ingredients:

  • 1 pound shishito peppers

  • 1 tablespoon olive oil

  • Sea salt for sprinkling


Instructions:

  1. Heat olive oil in a skillet over medium-high heat.

  2. Add shishito peppers and cook for about 5-7 minutes, turning occasionally until blistered.

  3. Sprinkle with sea salt and serve warm.


These peppers are perfect for appetizers or a light snack that brings vibrant flavors to the table!


High Protein Carrot Cake

2 whole eggs

1/2 cup plain Greek yogurt (0%)

1/2 cup any milk (I use 1%)

1 tsp vanilla extract

2 tsp coconut oil

1 heaping cup of any flour (I use blended rolled oats)

2 scoops vanilla protein powder

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp ginger

1/3 cup sweetener (1 use stevia or Splenda brown sugar)

1 cup grated carrot (or more if you like)

Icing:

1/4 cup light cream cheese (1 use 95% light)

1 tbsp sweetener

1/4 tsp vanilla

optional: 1/2 scoop vanilla protein powder

Baking Time: 350°F for approx 28-30 minutes
