Veggies in for the Win!

Hello CSA Family, and welcome to the second week of CSA season!


You have probably seen the weekly email that is sent by Farmer John, telling us what will be in the shares. This week we are due for some amazing greens and veggies!


But, what do we do with these? Have no fear, here are some suggestions to use many of the items in your CSA goodie bag!


This week we will have (among some others): Spinach, Summer Squash, English peas, Lettuce, Salad Turnips, and even Frisee for premium members.


Spinach

Well, what to do with this spinach?

Of course, you can make all manner of spinach salads, and you can toss into your favorite soups, stews, and curries. Even toss into your egg or tofu scramble or quiche!


What about these egg cups? Especially if you are ordering eggs from the CSA, this will use up both!

Salad Turnips

Also known as Hakurei or Tokyo Turnips, they are tender and are perfect raw in salads, braised, or quick pickled.

Try braising or pan searing to bring the sweetness out even more!

Celebrate the mildly bitter and peppery taste and snappy texture of this green!

What to do with mushrooms

Did you order mushrooms and now not sure what to do with them?

Got a Fruit Share?

Cherries and blueberries are on the menu this week!


Blueberry Vinaigrette will be lovely on your spinach!


Cherries are a delicious fruit that can be eaten in desserts, salads, or even in your hands. But how about a savoury twist on cherries?


These Balsamic Thyme Cherries are featured on pork chops in this recipe, but, would be just as much at home on grilled chicken, or my favorite, grilled tofu!
