We are winding down yet another absolutely outstanding CSA season, with 7 weeks left, before we draw to a close! But don't worry you can still order your bulk boxes! We will be sending out information on the bulk boxes - don't miss out! this will carry you well through thanksgiving and beyond. I never skip this. It keeps me happy for WEEKS.

Make sure you order this box of goodness and sunshine! You will get potatoes and tubers and greens and onions and shallots, squashes and radish, so many delights!


ALWAYS GO FOR ORGANIC

This winter, when you're shopping, remember how much better organic is for you. Did you know that there is a way to tell if the veggies at the store are really organic vs conventionally grown? The codes on the produce sticker will tell you!


If it starts with a 3, and has 5 digits, it's also been irradiated, to be electronically pasteurized.

Well, now, on to today's recipes for our featured veggie stars we will see this week:

colored peppers, sweet potatoes, beets, kale, spaghetti squash - among others!


Peppers!

How about layering some gorgeous peppers and onion and avocado and hummus or goat cheese on some delicious bread and making a fantabulous:

Peperonata

So popular throughout Italy, and there are many variations. Based on bell peppers, onions and tomatoes slowly simmered until fragrant and meltingly soft, peperonata is a summer favorite to which other vegetables can be added. What to serve it on? The recipe here says:

  • Peperonata is excellent with grilled steak, pork or Italian chicken cutlets.

  • Stir it through pasta for a delicious peperonata sauce.

  • Make an irresistible appetizer with cheeses, salami and crusty bread.

  • Top crusty slices of bread for a super tasty bruschetta.

  • Serve with the fried Italian sandwiches known as mozzarella in carrozza - so yummy!

BEETS

You don't always have to cook beets to enjoy them! You can spiralize them and use as noodles, and grate them into a salad as well! And blend them into so many other yummy foods.


Quinoa Burger

Say goodbye to mushy, bland veggie burgers forever! This quinoa burger is tangy and spicy, with a delicious hearty texture and perfect crispy edges.

What do i do with all these shallots?

Well I never have a problem with this because you can just thin slice and toss into salad, saute with garlic and mushrooms and toss into some leftover cooked rice with fresh or dried herbs, a couple splashes of wine or broth, and viola - a perfect pilaf everyone will think you slaved over!
