No kiddin, y'all.... it's been HOT for weeks now, and it's not letting up anytime soon! Thank goodness we still have a healthy crop of goodies from our local CSA!
Now to use up our luxurious bounty!
We have Zuchinni, lettuce, cucumbers, sweet onions, spinach, fingerling potatoes, beets, scallions, broccoli or cauliflower, and herbs!
Well, with Lettuce, spinach and cucumbers, and herbs, and scallions.... I think we have to make some COBB salad!
Use that lettuce and spinach for a base, sprinkle scallions, and I would defeinitly add cucumbers!
Use those herbs for the dressing, which is in the recipe as well!
Swap out the meats to your preference, or even choose chickpeas or tofu instead! That's my fave!
What about those Beets?
Well, you can certainly boil them, dice them, and add them to your salad above!

Fingerling Potatoes
It's so hot, why not grill them? Toss in olive oil, and lay on the grill on medium heat, probably 5-10 minutes, rotating every few minutes. when you can easily stab them with a fork or knife, they're done! Toss with your fresh herbs, salt and pepper, even a squeeze of fresh lemon!
Or if you prefer to roast in the oven or air fryer, it's still easy as pie!
